Instructions

Make the Crepes:

  1. Prepare the Batter: In a mixing bowl, whisk together flour, eggs, milk, butter, and salt until smooth. Let the batter rest for 10 minutes.
  2. Cook the Crepes: Heat a non-stick skillet over medium heat. Lightly grease with butter or oil. Pour 1/4 cup of batter into the skillet, swirling to coat the surface evenly. Cook for 1-2 minutes per side until lightly golden. Repeat with the remaining batter. Set crepes aside.

Make the Filling:

  1. Sauté the Vegetables: In a large skillet, heat olive oil over medium heat. Add onions and cook until translucent, about 3 minutes. Add mushrooms, bell peppers, and garlic. Sauté until vegetables are tender, about 5-7 minutes.
  2. Add the Turkey: Stir in the shredded turkey and cook until heated through.
  3. Make the Sauce: Add cream, chicken broth, and Dijon mustard to the skillet. Stir to combine and cook for 2-3 minutes, until the sauce slightly thickens. Season with salt and pepper to taste.

Assemble the Crepes:

  1. Fill and Fold: Spoon the turkey mixture onto the center of each crepe. Fold the sides over or roll them up.
