Ingredients

Scale

  • 1 ½ pounds large shrimp, peeled and deveined
  • 2 tablespoons olive oil
  • 1 green bell pepper, sliced
  • 1 red bell pepper, sliced
  • 1 medium onion, sliced
  • 2 cloves garlic, minced
  • 2 tablespoons Cajun seasoning (store-bought or homemade)
  • 1 teaspoon paprika
  • ½ teaspoon cayenne pepper (optional, for extra heat)
  • ½ teaspoon dried oregano
  • ½ teaspoon dried thyme
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • 2 tablespoons lemon juice
  • 2 tablespoons chopped fresh parsley, for garnish

Instructions

Prepare the Shrimp:

  1. Season the Shrimp: In a large bowl, combine the shrimp, Cajun seasoning, paprika, cayenne pepper (if using), dried oregano, dried thyme, salt, and pepper. Toss to coat evenly.

Cook the Vegetables:

  1. Sauté the Vegetables: Heat the olive oil in a large skillet over medium-high heat. Add the bell peppers and onion and sauté until softened, about 5 minutes. Add the garlic and cook for 1 minute, until fragrant.

Cook the Shrimp:

  1. Add the Shrimp: Add the seasoned shrimp to the skillet with the vegetables. Cook for 2-3 minutes per side, or until the shrimp is pink and opaque. Be careful not to overcook the shrimp, as it will become tough.

Finish and Serve:

  1. Add Lemon Juice: Remove the skillet from the heat and stir in the lemon juice.

  2. Garnish and Serve: Garnish with chopped fresh parsley and serve immediately.
