  • 12 oz pasta (such as fettuccine, penne, or spaghetti)
  • 1 tablespoon olive oil
  • 3 cloves garlic, minced
  • 1 small onion, finely chopped
  • 1 cup milk (or half-and-half for extra creaminess)
  • 5 oz Boursin cheese (Garlic & Fine Herbs flavor)
  • ½ cup grated Parmesan cheese
  • ½ teaspoon black pepper (or to taste)
  • ¼ teaspoon red pepper flakes (optional, for a slight kick)
  • 1 cup baby spinach or arugula (optional, for a fresh touch)
  • ½ cup cherry tomatoes, halved (optional, for a burst of sweetness)
  • 1 tablespoon fresh parsley, chopped (for garnish)

Instructions

Cook the Pasta:

  1. Bring a large pot of salted water to a boil and cook the pasta according to package instructions until al dente. Reserve ½ cup of pasta water before draining.

Make the Sauce:

  1. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté for 2-3 minutes until softened.
  2. Add the minced garlic and cook for another 30 seconds until fragrant.
  3. Reduce the heat to low and pour in the milk. Stir in the Boursin cheese and Parmesan cheese, stirring until fully melted and combined into a smooth sauce.

Combine Everything:

  1. Add the cooked pasta to the skillet and toss to coat it evenly in the sauce. If the sauce is too thick, add a little reserved pasta water until it reaches your desired consistency.
  2. Stir in the baby spinach (if using) and allow it to wilt for about 1 minute. If adding cherry tomatoes, mix them in at this stage.

Serve and Garnish:

  1. Season with black pepper and red pepper flakes, if desired.
  2. Garnish with fresh parsley and serve immediately while warm.
