Ingredients
Scale
- 12 oz pasta (such as fettuccine, penne, or spaghetti)
- 1 tablespoon olive oil
- 3 cloves garlic, minced
- 1 small onion, finely chopped
- 1 cup milk (or half-and-half for extra creaminess)
- 5 oz Boursin cheese (Garlic & Fine Herbs flavor)
- ½ cup grated Parmesan cheese
- ½ teaspoon black pepper (or to taste)
- ¼ teaspoon red pepper flakes (optional, for a slight kick)
- 1 cup baby spinach or arugula (optional, for a fresh touch)
- ½ cup cherry tomatoes, halved (optional, for a burst of sweetness)
- 1 tablespoon fresh parsley, chopped (for garnish)
Instructions
Cook the Pasta:
- Bring a large pot of salted water to a boil and cook the pasta according to package instructions until al dente. Reserve ½ cup of pasta water before draining.
Make the Sauce:
- In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté for 2-3 minutes until softened.
- Add the minced garlic and cook for another 30 seconds until fragrant.
- Reduce the heat to low and pour in the milk. Stir in the Boursin cheese and Parmesan cheese, stirring until fully melted and combined into a smooth sauce.
Combine Everything:
- Add the cooked pasta to the skillet and toss to coat it evenly in the sauce. If the sauce is too thick, add a little reserved pasta water until it reaches your desired consistency.
- Stir in the baby spinach (if using) and allow it to wilt for about 1 minute. If adding cherry tomatoes, mix them in at this stage.
Serve and Garnish:
- Season with black pepper and red pepper flakes, if desired.
- Garnish with fresh parsley and serve immediately while warm.
