  • 4 salmon fillets (about 6 oz each)
  • 1 tablespoon olive oil
  • 1 tablespoon unsalted butter
  • Salt and pepper, to taste
  • 3 cloves garlic, minced
  • ½ cup sun-dried tomatoes, chopped
  • 1 cup heavy cream
  • ½ cup freshly grated parmesan cheese
  • 1 teaspoon Italian seasoning
  • 2 cups fresh spinach
  • 1 tablespoon fresh basil, chopped (optional, for garnish)
  • Lemon wedges (optional, for serving)

Instructions

Cook the Salmon:

  1. Heat olive oil in a large skillet over medium-high heat. Season both sides of the salmon fillets with salt and pepper.
  2. Sear the salmon for 3-4 minutes per side until golden brown and cooked to your preferred doneness. Remove from the skillet and set aside.

Make the Sauce:

  1. In the same skillet, lower the heat to medium and add butter. Sauté the garlic until fragrant, about 1 minute.
  2. Add the sun-dried tomatoes and cook for 2 minutes.
  3. Pour in the heavy cream and stir in parmesan cheese and Italian seasoning. Simmer for 3-4 minutes until the sauce thickens.

Combine and Serve:

  1. Stir in the spinach and cook until wilted. Return the salmon to the skillet, spoon the sauce over the fillets, and cook for 2 more minutes to warm through.
  2. Garnish with fresh basil and serve with lemon wedges, if desired.
