Ingredients
Scale
- 4 salmon fillets (about 6 oz each)
- 1 tablespoon olive oil
- 1 tablespoon unsalted butter
- Salt and pepper, to taste
- 3 cloves garlic, minced
- ½ cup sun-dried tomatoes, chopped
- 1 cup heavy cream
- ½ cup freshly grated parmesan cheese
- 1 teaspoon Italian seasoning
- 2 cups fresh spinach
- 1 tablespoon fresh basil, chopped (optional, for garnish)
- Lemon wedges (optional, for serving)
Instructions
Cook the Salmon:
- Heat olive oil in a large skillet over medium-high heat. Season both sides of the salmon fillets with salt and pepper.
- Sear the salmon for 3-4 minutes per side until golden brown and cooked to your preferred doneness. Remove from the skillet and set aside.
Make the Sauce:
- In the same skillet, lower the heat to medium and add butter. Sauté the garlic until fragrant, about 1 minute.
- Add the sun-dried tomatoes and cook for 2 minutes.
- Pour in the heavy cream and stir in parmesan cheese and Italian seasoning. Simmer for 3-4 minutes until the sauce thickens.
Combine and Serve:
- Stir in the spinach and cook until wilted. Return the salmon to the skillet, spoon the sauce over the fillets, and cook for 2 more minutes to warm through.
- Garnish with fresh basil and serve with lemon wedges, if desired.
